Four Tier Sweet Sixteen Cake on Cake Central

The bottom two tiers are vanilla sponge with custard and fresh strawberries and the top two tiers are a rich chocolate cake with whipped cream. All flower-shaped tiers are covered in HPT ( a stabilized whipped cream) and airbrushed for the outside color. The daisys are handmade of gumpaste and the centers for the daisys were made seperate, airbrushed, and then glued onto the flowers. The letters are pre-piped royal icing that I stood up in the cake for easier visibility.

Thank you. HPT (High Performance Topping) is like whipped cream except it is less liable to melt on you because it is stabilized. It is a commercial topping and tastes very good ( I usually add some cream to it to make sure the texture is right), I was able to get it from my internship at that time. It is very hard to find someplace that will sell it to a home baker. I used it on this cake because I had to travel 1 and 1/2 hours with it in the car.
