These are a take on the italian brioche 'Pesche dolci di pasta brioche' , imagenthatnj put me onto them, and I fell in love at first sight. Bigredkitchen made them in cake, so I wanted to give it a go as well, as I had been wanting to try sky high's peach melba cake, and it seemed like a good recipe to try it with.

These little cakes are supposed to look like peaches, but they're not as convincing as I'd hoped they would be! I foolishly chose a very soft cake (a cream cake), and it was SO difficult to work with, I coudn't get the icing to behave without ripping the cake. And every time I picked one up I seemed to break it. There were supposed to be six! Oh well, maybe I'll do better next time :)
