This cake was made for a special girl who really wanted a Mermaid Cake for her birthday. It's a lemon poppyseed cake (flavour of choice of the Birthday Girl) and was about 10 inches high. I used a 10" springform cake with an "angel cake" pan cake on top, then carved. All is covered in fondant and edible except for the doll which is wrapped in cellophane prior to being inserted in cake.
