Philadelphia Art Museum Cake

My cake replica of the Philly Art Museum! The main building is vanilla cake with chocolate ganache and homemade caramel filling. The side wings are vanilla cake with chocolate ganache and fresh raspberry filling.

I used a few new techniques here, which I liked. For the windows, I placed black fondant on the buildings, then cut out panels of ivory fondant measured to size. I used a fondant cutter to cut out windows, froze the panels briefly (5 min) so they wouldn't distort, then applied them to the building. I don't know if you can tell, but I cut gelatin sheets out for the windows and applied them using piping gel.

This was probably one of the most challenging cake experiences I had. Philly had a bout of 90+ percent humidity for four days in a row, causing my fondant to melt and slump. Then I had to drive it 3.5 hours to DC and bring it to a party on a rooftop in the hot and humid DC weather. I'm just glad it survived!
