Was the "red" overpowering? I saw your post and wanted to see the cupcakes. Do you feel this would make a good 8 or 10" cake? i.e., not too crumbly....
GI - I don't think the red was overpowering. I just add until I like the colour. I don't really go with what amount the recipe says. And yes, I think it would make a good 8" or 10" cake. The recipe is written for a cake, I just made it into cupcakes. :) I didn't find it too crumbly at all.
