200 hundred profiteroles and a whole lot of chocolate. The profiteroles are filled with whip cream. The bow on top is ribbon. Finished height 70 cm. This was for a lady turning 50, her kids organised a surprise party. The croquembouche was their parents wedding cake, so there was a sentimental value to it.
