This cake is a Guinness porter dry stout chocolate sour cream cake with Ghirardelli chocolate ganache filling with a Baileys Irish whiskey cream buttercream frosting!

What is supposed to look like a derby hat is a Butter pecan cake made with Guinness beer and Irish cream buttercream frosting covered in vanilla fondant. The buckle on the derby is painted with gold luster dust.

The Derby is hand carved and I think the dome shape is ok but just didnt take the time on the brim and it didn't come out so well. You cant tell from the photos but there is a cupcake cut diagonal under the hat tilting his derby up on its side a bit. I think my little Irish man looks more like an Irish werewolf or caveman. I may have had one too many while I made this! But my 5 year old little neighbor loudly declared that this was the best chocolate cake ever! it really was fantastic and I dont like beer!
