Fat free lime sponge cake with mango pieces filling and lime creme fraiche filling and topping and mango decoration. Made it for a lady at work's retirement - the first time I was actually asked to make a cake for something outside immediate family so was quite nervous! She was delighted with it though and she was a really thoughtful member of staff who looked after us all so I was pleased.
