This is the wedding cake I did for my daughter's western theme wedding. The bottom and top layers are golden butter cake frosted with a crusting butter cream made with a small amount of cream cheese. The middle layer is amaretto pound cake with a white chocolate/cream cheese mouse with chopped chocolate/amaretto candies folded in for the filling. A white chocolate buttercream was used for the middle layer.
