Lotus flower and lilly pad are waferpaper (rice paper) painted with cocoa butter. Frog is fondant, gum paste and royal icing painted with cocoa butter. Fish are reverse painted on the inside of glass with cocoa butter. Pebbles are molecular gastronomy caviar.
