Christmas Cookies

Christmas Cookies on Cake Central

I absolutely detest the way Royal Icing tastes, and I was making these cookies for a real icing lover - so I made up my own icing that would still harden yet tasted wonderful. Here is the final result!

I used 4 T meringue powder, 1/2 c of shortening, and about 1.5 lbs. of powdered sugar. I also went crazy with flavoring and added butter and clear vanilla flavoring. It needs to be slightly thicker than regular frosting. By only using 1/2 c. of shortening and 4T meringue powder, it hardened pretty well. These were pretty firm after about 3 hours, but not crunchy like that nasty royal icing. I wanted mine to taste as good as they look. The smell alone is enough to get anyone drooling.

Icing sounds similar to Alice's cookie icing which is in the recipe section. Mine didn't harden though. These are very cute and sound delicious.

crimsonhair - I'm sure that you could use butter. I didn't simply because I wanted pure white icing - I bet it would be even better though.
