Made this for another of the daycare ladies for her daughter's 23rd birthday. OK, I knew topsy turvy would be hard but heck - I found it really hard! I am not at all pleased with it. Had heaps of trouble & got a terrible finish especially on the top tier because that was the special vegan layer, so found a recipe but it was terrible! Way to spongey and light and it was losing its shape really badly. Had to do two layers of fondant to try and get decent coverage cos couldn't use ganache or buttercream due to the dairy, eeek!!!! :-(
