Thanks everyone for your wonderful comments. I use Sharon's Sugar Shack buttercream reciipe. I use have butter(challenge or Land o Lake) because it keeps the icing white and half hi ratio shortening. I always mix on low speed and use milk or powdered creamer reconstituted in water. I finish mixing by hand to keep the air out of it. I let it crust and use the foam roller technique. The foam roller technique was posted my Melvira. Thanks Melvira for making smoothing buttercream so easy and beautiful.. Be aware when airbrushing buttercream to make sure your cake is on a firm board. The crust on the cake can crack when you move it and cause crazing.
