For my friend's baby's 1st birthday.

Alternating layers of chocolate and coconut cake. Bottom tier is filled with homemade dulce de leche and top tier is filled with semi-sweet chocolate ganache. Iced with chocolate ganache and covered with vanilla fondant.

*note...dulce de leche is NOT fun to make! But it tasted great.

Sock Monkey birthday cake

    I use tappits. They're awesome. I work with Satin Ice and tylose for my gumpaste and roll it quite thin with the pasta machine...like on a 6. I press out the letter, let it sit in the tappit for a few minutes and then tap it out. Perfect letters every time. :D Thanks for the wonderful comments everyone.

    I just printed out a tres leche recipe and was wondering about bottom tier stability---I see it works perfectly! Your smooth fondant is so perfect, too!, The edges are so enviable!

    dulce de leche love it.... i put my in the pressured cooker in about 30 mins done cool an ready to go

    Pressure cooker! Really? I may have to invest in one. I bought a jar of dulce de leche to try and it's good but not as good as mine. The smooth fondant was helped a bit by photoshop (cat's out of the bag!) but the sharp edges were acheived by icing in ganache. I've never been able to get those sharp edges when icing with buttercream.
