Chocolate Ganache Wedding Cake With Fresh Flowers

This was my first wedding cake and first ganache cake. I made this as a gift for a dear friend of mine who was finally marrying her long time beau. The bride wanted a square cake with chocolate ganache with fresh flowers. I had practiced and practiced and finally got the technique down. When it came time to ganache the actual wedding cakes go figure I can't get it smooth for the life of me! I don't know what was different about that time, but it just wouldn't work for me. At this point it was getting to be sorta late and if I was going to make and design changes I didn't want to do it without the Bride's permission. At 10:30 the night before her wedding I have to say she was surprisingly calm about me telling her the cake so far looked like crap! At that point I decided it was time for me to learn how to pipe scrollwork. Thanks to a lot of cakes on CC and google images I was able to figure out the basic principle behind scrollwork. A little bit of practice in my sketch book and on the counter with the whipped ganche and voila'! Scrollwork! As for the fresh flowers I have never arranged one in my life. 30 minutes (thanks to stand still traffic on the freeway for about 2 hours) before wedding we show up and I still have to assemble the top tier, do the scroll work, arrange the flowers. AAAGGGHHH! As you can see from the picture I was able to complete it and I still got to see my friends get married!
