Easter Basket

I loved these cakes when I saw them and I knew I just had to make my own version. It was made for family Easter. The cake is baby food carrot cake (no nuts and raisins on request) so I added shredded carrots for texture. The icing is cream cheese (I had a bit of trouble when it wouldn't thicken right) with Pirouette rolled wafer cookies on the side and malted Easter eggs on top. It was a big hit that no one wanted to cut at first but once it was cut ... it was gone!
