This is a three tier, torted Dr. Suess themed cake. The bottom layer is a dark chocolate cookies and cream cake, the middle cake is a carrot cake with lemon cream cheese frosting and the top layer is a double coconut cake with a toasted coconut lemon buttercream frosting.
