They are very easy. Use tip 2D and start in the centre of the cupcake and move to outside to get the rose look. Then I just attach each cake with 2 toothpicks onto a stryofoam ball in the vase. And us a leaf tip to fill in gaps. They look so much better in person then on the pictures.
