We didn't spend x-mas day at home, so I made this cake 3 days later. My oldest son's birthday is new year's eve and my husband doesn't like x-mas cake, so I made our much beloved Mary Berry Carrot Cake and my son and I decorated it. Thier slices were eaten very quickly! Carrot Cake really does sound healthier than it is! The topping is the topping for the cake- soft cheese butter icing - really yummy!
