What a disaster this was... never made any diabetic cakes before and the icing as well. Sometimes things don't go so well. Usually if cakes crack I can fix them and no one would have ever known - not this time! Icing wouldn't stay on the side of the cake - hence the flowers on the side and tag on the top to hide flaws. The lady was able to have cake so that was the good thing! tfl
