Southern Flounder

Southern Flounder on Cake Central

The flounder is made of a thin slice of cake cover with fondant and airbrushed. I learned the finer points of flounder identification with this cake; this is a 'southern flounder'. I used corn syrup to give it a wet appearance which was fun, but the color details were obscured. The sand is raw sugar, the oyster shells and gig are made from gumpaste. The groom liked Cpt. Morgan rum so I used some to flavor the cake and filling, then found a sample bottle and covered it with sugar barnacles and buried in the sand bank. It was a fun cake to make and was the least stressful of the two (I also did the wedding cake).
