In community album: 2009 Las Vegas Cake Contest
This cake was made for my parents 30th anniversary. I couldn't come up with a way to combine my father's hobby of fishing with my mother's love of knitting, but as they are often to be found in front of slot machines, I thought this would be perfect. Both my parents and the guests loved it. 
The cake is split and layered first with Toblerone mousse (yummy!) and then raspberry mousse. It is covered in fondant and the writing is royal icing.

I would love to know what Toblerone mousse is...this is a great cake and you did such a nice job on all the details - going in my favs!

Toblerone is a Swiss brand of chocolate, it is available all over Europe, but I don't know about the US. To make Toblerone mousse, you heat 700 ml of double cream to just below boiling point and then pour it over 400g of chopped Toblerone. Stir until the chocolate is melted, cover with clingfilm and put in the fridge. The next day, you whisk the cream till it gets stiff, then spread it on your cake. Be careful though, it stiffens very suddenly and if you whisk too much it will be all clumpy.
