Simone's Carousel on Cake Central

I made this cake for my cousin's daughter. She was having a pony themed party. Made the ponies out of sugarpaste, let them dry and then flooded them in with royal icing. The cake is covered in buttercream, with sugarpaste stars. The cake is a buttercake, with a coconut syrup and caramel and cream filling. A family favourite. Both cakes baked in 14inch pans (3inch high) top carved to achieve shape. Lots of scraps left for tasting : )

This is so precious! The ponies are simply gorgeous. Any little girl would be thrilled! Excellent idea.

Inspiration, hm, I supposed that the ponies gave me a great excuse to make a carousel that i've been wanting to make for a long time. I love working with buttercream so i just went for it. The ponies are "My Little Pony" imitations, as that is what Simone had on her birthday invites.

Have had trouble with buttercream because we can't get the ingredients that most of the recipes in this site use. I thought the inspiration may have come from the womans weekly birthday cake book.. something similar but not as good as yours

I make a syrup by boiling 2 cups of sugar and 1 cup of water for a few minutes until all sugar is dissolved and when it has cooled a little I add 20mls of Queen Coconut Essence. YUMMY!! It goes really well with the buttercake, caramel and fresh cream. I also add coconut essence to my cream before i whip it.

millcitydairy, the top cake was done with the exact same pan as the bottom pan, and then it was carved into that shape. Lots of scraps to eat : )

Oh my! That is beautiful! My daughter is just now getting into Ponies. So glad to see yours and get ideas from your cake. Can you please tell me how you made the ponies. Also can you direct my to a sugarpaste recipe please. I've never used it before. Thank you so much :D
