This is 3 layer sponge cake. The bottom layer is chocolate sponge cake, the middle is soaked with punch of orange, lemon and rum and top is vanilla layer. It is iced over with rum icing (mix of powdered sugar, rum and hot water). This is the most popular cake in our family but awful to decorate. The only non-traditional are the marzipan mice.
