this is lovely, could you share what sizes these are please?

The sizes are 5, 4 & 3. I don't have those pans, so I baked a sheet cake and cut out templates from the computer and cut around the cardboard rounds.

How did you get the white fondant so shiny lookin?

It actually wasn't shiny...I think that's the flash from the camera. But I've heard that if you lightly steam it, you'll get a shine.
