The Cookie is a tri colored cookie made with almond paste. I uses red food coloring for the outside cookies and left the inside cookie plain. In between the layers of cookies is an apricot preserves. Then chocolate is bittersweet chocolate that has been tempered and the cookie is dipped into the chocolate held up side down to create the vein.
