I made this cake as the finale for the Wilton Level III class. This 6-8-10 cake is covered in blue fondant with brush embroidery and a white fondant bow.
The technique I used for the flowers is called brushed embroidery. It's fairly easy to do - just pipe a thin line (tip #2 or 3) of either royal or buttercream icing. Then, with a damp brush, pull the edge of the icing towards the middle of the design. It's not difficult, but can be extremely tedious..it took me about 4.5 long hours to do the flowers on this cake.

Teh brush embroidery looks amazing! I am starting course 3 tomorrow. I can't wait. I hope mine turns out half as beautifully.
