Carrot Cake on Cake Central

This is my first cake order for a guy I work with. Tomorrow is his birthday and he wanted a cake to bring in for this team (and to support a fellow co-worker - how nice is he :-), but with nothing written on it. It is a 10" double layer carrot cake with Crusting Cream Cheese icing for filling and icing. The swirls are actual pieces of carrots thinly sliced and swirled. I'm not really happy with this cake, but my DH says they'll like it. Here's hoping he will and I get more cake orders. LOL. TFL!!!

Thank you so much for the nice compliments. If anyone cares, the roses are artificial. I know ANG PM'd me asking what icing I used to make them :lol: With a potato peeler, you want to peel slices of your carrot from top to bottom. Then roll the slices up, stick a toothpick through it (to keep it rolled up), place in a cup of water and refrigerate for a couple hours. Take them out, remove the toothpick and your carrot slices will keep their shape. Pat them really dry so they don't leak water on your

this is so cool, i never thought of the carrot slices! i just did a carrot cake the other day and thought, what can i do to dress this up a bit-i didn't want flowers, as it was for a man. Great job!!!

Such a cool way to decorate a carrot cake! It looks great & yummy! You sure can't tell that you had any trouble with it at all. Thanks for sharing.
