Snowcovered/white Roses on Cake Central

Hi sugar friends! This was one of 18 wedding cakes I made for the John Henry floral book. It was such an honor to be a part of this. I made all the dummy cakes and they flew florists in from all over the country to do the floral work. I thought you might like to see this one, with it being winter and all. This cake REALLY sparkled in person, but the sparkles got lost .... darn! I have permission to post this from the JH company. Also, the table was beautiful...thought it might give some ideas :-)

Beautiful cake as always Jennifer! Is it fondant or buttercream? (I'm just wondering how you were able to apply the coarse sugar!) Excellent job!

Since this was a dummy cake, I applied the sugar with clear piping gel. If I were doing this cake for real, I would probably use a slow or non-crusting buttercream. Thank you, everyone, for your kind comments!
