A large wedding and a pretty bride deserve a nice cake, don't you think? Multiple flavors with a little bit of color was what the bride wanted. Buttercream mousse icing.

Buttercream mousse is what I call the Mousseline Buttercream icing from Rose Levy Berenbaum's book, "The Cake Bible". It's like a swiss meringue buttercream ... basically an egg white meringue that has 250 degree sugar syrup poured into it, then finished off with butter. Yummy.
