This large wedding cake was requested by a friend who had a string of bad boyfriends who'd break off the engagement, so when she finally found "Mr. Right", she did it up right and was extremely happy with the way I interpreted her vision of simple and stately.

I believe the icing I used was the Mousseline Buttercream from Rose Levy Berenbaum's book "The Cake Bible". Once on, I hot knifed it and it comes out looking like candlelight-colored satin. A nice difference from good ol' crusting buttercream, I think.

Main cake was 6"-10"-14" with four 12" satellites. Served 400 (saving top tier for 1st anniversary).
