My first tiered and pillared cake.  This was my Wilton course 3 Finale Cake...and it took well over 10 hours for all those gumpaste roses!  (I did get faster at making them).  Since I had 40 roses, and it was soon my 40th birthday, I removed the roses and froze the cake until party day.  Then (this is embarrasing), I was trying to re-assemble it when the party was supposed to start, so 2 friends stepped in and helped me finish up...therefore I have to share the credit for the finished result that you see.

This cake is double chocolate fudge with raspberry filling, covered with chocolate fondant.  It was a really hot on the day of my last class, and I had to drive an hour and a half to get there in a car with no A/C.  That meant that my cake was nearly melting by the time I got there, and I had to deal with some air bubbles trapped under the fondant.  Still, we managed to salvage it.  Our instructor wanted us to demonstrate several techniques learned in class, and include at least one gumpaste flower.  I chose not to do any of the cakes in the course book, since I wanted something more manly that I could use for Father's Day.  This is the result.

This is the cake I made for my Wilton Course 3, Class 2.  Finally, I learn how to cover a cake in fondant!  Cake is chocolate with raspberry filling.  I had to alter my recipe because my husband's secretaty is lactose intolerant, and the result was a less dense cake.  (I am assuming that is why the corners are droopy.)  Bow and flowers are all fondant.

Cake is Pistachio with Raspberry Filling, covered in class buttercream.  I used at least one of each flower made in class, and pretty much followed the layout given.  However, I did add some Coral roses and rosebuds as the cake was too yellow for my liking.  I also used my leftover colorflow to experiment with butterflies at home.  They turned out, so my class bird was set aside.  I like basketweave, but found out that my hands are hot - the icing got softer, and the weave got fatter as I made my way around the cake.  Next time I do basketweave, I will have to try using two bags, and switch them off.  (Any other suggestions?)  TFL.

Wilton Level 1 (Cake #3).  This was my finale cake for my first Wilton course.  When I came up with the idea of making a mound of roses, I had no idea how many roses that would require or how long it would take!  As I rushed to get my roses done, I discovered that the "imperfect" roses looked almost as good as the ones that I painstakingly labored over!  While there are flaws with this cake, I think the overall effect is still pretty good.  I put it in the freezer and told my husband he could pull it out for my birthday!   
(By the way, I used half of the Wilton sportsball for the base of my mound).

This is my first cake from Wilton Level 1.  It almost killed a perfectionist such as myself to have to do the rainbow in under 15 minutes (including the piping gel transfer).  At least I got to finish the border at home.  It had been raining for almost a week, which explains the name of the cake.  (And wouldn't you know - it stopped raining the next morning!)
