This is a carrot cake w/ cream cheese frosting. The cookies on the side are sugar cookies (pre-made dough) with fondant - made to match the silks the jockeys will be wearing this year. The balls around the bottom are bourbon balls. The horse & letters on top are choc. transfers. The roses have chocolate centers & are buttercream icing.
