I made this cake for my cousin's 40th Wedding Anniversary. The top two tiers are cake, the bottom two are cake and a cake dummy. The topper is gumpaste roses.
This cake was a disaster when I got to the venue. I had transported the cake 2 x 2. The cake dummy bottom layer was covered in Royal Icing with a layer of Buttercream over it . When I went to get it out of the car at delivery, I discovered the upper tier and slide off the lower dummy tier and was hanging off by about 4 inches. I just stood there and cried. I only had enough icing with me to put on the pearls once I stacked the two sections together. My husband was a trooper. He helped me put it back together (which I didn't think was even possible). We had to take the icing that slid and put it back in place, clean the fondant pearls that slid with the icing and put it all back together. It took us an hour and a half to get it presentable. Luckily we arrived a half hour ahead a schedule. If anyone hadn't seen it before, they really couldn't tell anything had happened. Lesson learrned, never deliver a cake without spare icing and always make sure royal icing is COMPLETELY dry before you cover it with Buttercream.
