School Cake

Made for the Assistant Principal of an Elementary School. The school mascot is the tiger. She is diabetic, so after tons of research, came up with a yellow Splenda cake filled with a combo of fresh chopped strawberries in a mixture of pure-fruit...

Made for the Assistant Principal of an Elementary School.  The school mascot is the tiger.  She is diabetic, so after tons of research, came up with a yellow Splenda cake filled with a combo of fresh chopped strawberries in a mixture of pure-fruit strawberry preserves.  The icing, which I will provide separately, is a mixture of butter, cream cheese, Splenda, and a little milk.  I did not ice the cakes; instead, I wrapped them tightly in plastic wrap.  After the presentation, they will peel off the fondant (all MMF and homemade) and ice the layers for serving.  The cake was ordered by her husband as a surprise, so I hope it's a success.
