Hi there! Make it all in fondant!! if you want to have something to hold the hears tha's eatable, use crakers !! We've done it on a mickey's house, and it work like a charm! ;)
I would fill in the holes, knowing it wouldn't have the perfect finish, it would be better then the hole.... Sorry, but we don't have any perfect solutions on that.... :(

We don't leave our cakes more then two days in the frige. Yet we always wrap the in film so they don't dry up. Anotjer thing is that some cake filling need the fridge to "cook down" the flavours.
