For the ramp I'd just carve a 9x13 and make sure when staking the sides up to put enough support so they stay standing. Wish I could help more on the construction of the ramp.   But for the logo I would do a frosting transfer....

If she wants it simple I'd do roses as the borders in between the tiers. It's really elegant looking and should be fairly easy to do. Good luck!
I think your timetable is good. Just make sure the cakes are thawed before trying to ice them, as the icing will crack if they aren't thawed enough. Otherwise it sounds like a good plan! Good luck :)
Looks like a lamp stand. When you make it make sure there is enough weight on the base that if wont tip over. And I would definitely make sure you get credit for it. If you don't regularly do work for the other cake maker you could say...
