In sweden where i live we also have salmonella-free eggs but i would still use liquid glucose to make a commercial marzipan softer, because (at least in sweden) that's what's in them to start with. Otherwise eggwhites in a carton should be fine, but might be a bit hard to find in some places in the world.
So, i've been trying to make gumpaste anemones but even though i try to glue the wires inside the petals they seem to never stick. They twist inside the petal, they're loose! So when i try to assemble the flower, they either fall off the wire or twist and turn sideways! What do I do? It's the first time i try wiring flowers...
