Hi everyone! i am a self taught baker who has a background in Art, so i do a ton of sculptured cakes, infact i prefer them...but unless im using pound, which not everyone likes, i have issues carving. I seemed to be alright with the fondant aspect-but i suck at the baking aspect. does anyone have any ideas on types of cakes i can make that will carve well? I've heard alot obout madiera sponge...yes? no? or even adding cream cheese of sour cream to boxed mixes to make thems...
