You can add the white color to it. I've noticed that my gumpaste is also a little offwhite but dries white white. I think it is because it is a little translucent (due to the gelatin?). If you haven't let a little of it dry yet, try...

Definitely with the ribbon. The height of the ribbon should be fine with 5" cake. If the bride has fushia dresses, then she likes a 'wow' factor this ribbon will give you. Very nicely done.
