The best ganache recipe for me is just a really good quality chocolate and heavy cream. I use about 2 ouces less of heavy cream than chocolate, example... 10 ounces of chocolate and about 8 ounces of heavy cream. Chop your chocolate into small pieces and place in a large bowl. Just a reminder.... Wilton colors DO get Darker as they stand.. I have made red, black (especially hard to get dark) and dark blue icings that were not the exact color I wanted when I started decorating. but on standing for an hour or so the icing darkened quite a bit.
