I had no idea that how we all charge for cakes is such a contentious issue!   I think each of us just has to use what works best for us at the time.  What works for me now in pricing my cakes may not work for me later....
So, I love this discussion.  Delivering a cake is so stressful for me.  I have a question though.  I typically do not refrigerate fondant covered cakes or any of my cakes really (unless they have a perishable filling)....

I use Satin Ice as well.  I, personally, love Satin Ice...the taste and the final product on the cake.  I have no complaints.  I do agree, though, that Wilton is horrible tasting!
