You have to fold down the parchment, and yes you also have to fold them. You will not have very much chocolate in the bag to begin with, so "twisting" is not needed, plus you have better control with the palm pressure than the "twisting" method. Okay, you can do this...really.Call Kitchen aid...and get a telephone number for a dealer for the gears... order the gear and take your machine apart...I found step by step directions online...and repair it yourself.
