I live in VA, so this may be a problem for me! The butter cream is made with butter. I think I am going to take my chances on the refrigerator or I could turn the air conditioner on and freeze out my kids!! Tahnks for your help.

Thanks for the advice. I went ahead and used the Candy coloring, I got the color I wanted (had to use the whole jar) but it looks fine. The cake will be served tomorrow so, hopefully it won't fade. Thanks again.
