If you are using gumpaste or even fondant yes, those flowers can touch icing even if the icing is buttercream - NOTif it is whipped cream.
You could make a 9" or 10" sq base but make it only 1 layer (2 or 3" tall).  That one would be cut in 2x2x2" sqs = 16 or 25 servings.  The 6"x4" round would give you 20 servings (if I remember correctly!)

I was able to use fondant on PP recently.  Just do it as last second as possible.   Let costumer place.
I'm sorry to say I know of no subs for sour cream - unless there is a soy type of product that might be sold.  Since I have no need for such a product I'm not familar with them.
............needed to bake a 3 layer 6" cake and a two layer 8" vanilla cake.  So I made a batch that would fit all the pans needed. Obviously I can't bake all at once as I have only a regular residential...
