Do be sure to use just a tiny touch of each color.  One can always add more paste coloring but it's hard, if not impossible to lighten it once you have made a color too dark.

Sure you can change the color.  Not sure  you can go hot orange but certainly make it lavenday/purple :)  Just knead paste color into the fondant. Maybe even change it to brown or black the same way.

Re color: I say it's a very light pink or peach.  Does it matter that much?  As long as y ou keep the color very pale/pastel  you could use orange, or pink or even a tiny speck of brown to make them tannish.
