I have a client who wants a car cake but I will be out of town, the client wants to know if she could freeze the car cake once I make it and pull it out of the freezer the morning of the party. Can this be done? I'm worried the fondant would be wrecked by freezing it, and how exactly should I prepare it for the freezer if it can indeed be frozen?
Ait should be thawed gradually -- put in the fridge overnight - it's possible to do successfully and after someone buys a cake I don't care necessarily what happens but I would not endorse someone (a client) doing this but I'd sell 'em the cake-- and they could take their chances on it working or not--
ABox the completed cake. Wrap box in plastic wrap and foil. Freeze. 24hrs. before serving, place wrapped box in fridge. A few hours before serving, place wrapped box on counter to come to room temp. Right before display, remove cake from box.
It will be fine. I've had clients do it and if they follow directions--no problems.
