Need A Chocolate Recipe To Carve!

I signed up to Cake Central a while ago but have never posted. I am relatively new to cake decorating and am attempting to carve a winding road and decorate with a bike for my hubby's birthday. I have read lots of things on the forums but quite honestly have become quite confused! I've looked through the recipes but can only seem to find cakes from mixes and I like to bake from scratch. I've also seen a bit about freezing cakes and defrost before carving? ...So.... I really need help with a chocolate cake that's good to carve and not dry and also advice on freezing (it would be handy as time isn't on my side so I fit in baking at every opportunity) Thank you so much If anyone can help! Feeling very lost...this is only my 5th cake!

This is my go-to chocolate cake when I plan on carving, and it is delicious!

I normally don't, but freezing cakes works just fine.  I double wrap mine in cling wrap and they'll still be yummy a month or more later

 

Don't feel lost, just do your best and your hubby will love whatever you give him!
