Hey everyone!

I have a bride who wants this pleated cake for her cutting cake. I know the process of how to do the pleats, my only question is: do I do the pleats on the buttercream? Or do I do the pleats on top of fondant? Any inputs would be greatly appreciated. Thank in advance!

AI would create the pleats out of fondant. For the icing part, I would use white chocolate ganache. Ganache holds up better to the weight of fondant than buttercream.

Thank you for your response! Ganache sounds more reliable.
