AI am new In making cakes . I started by selling my cupcakes and so I decided to go for cakes. I have done 5 cakes so far and it was fine.. not as professional as most of you ...just ok. Anyway, yesterday I was supposed to deliver the cake to the customer but I couldn't it was so bad. It was a 3 layer chocolate cake filled with SMBC. I couldn't cover it with fondant. I used hersheys chocolate in all my cakes and didn't have trouble at all. Yesterday the chocolate didn't want to firm up and the AC stopped working. I used carma fondant and oh my God it had lots of bubbles and it stretched like nothing. I wasted 2 kg of fondant and then I decided to give up. Yesterday was not my day. Thank God the customer is a close friend of mine. I sat the whole night crying and decided I won't do any cakes. I am disappointed and I thought of sharing my feelings with people who would understand how I felt. :-(

hebacc, everyone has bad days. You can't help the humidity, the heat, the aircon breaking. Chin up, happens to even the most experienced :)

In fact, the best thing to do is keep going, the more you bake, the more you figure out how to fix things!

A[@]hebacc[/@] don't get discouraged and give up. It's called trial and error!!! I just finished my 3rd Wilton course and I had to bring a crumb coated cake to class and then lay the fondant in class. I've only attempted fondant twice before and both times were disasters. I told my instructor about my disasters and yesterday I said to her, you know what happen before I hope this won't happen a 3rd time! It didn't. I was so proud of my cake. My first attempt at a basket weave was an ultimate fail! But back to yesterday's class, there were things that I slightly messed up and I kept saying, "oh that's trail and error, but it's a go". My instructor laughed at me and said, "that's the only way to learn". I'm the YouTube Queen, I've watched so many tutorials that you'd think I'd be just as good as Buddy from Cake Boss...but I'm so far from it. So from one newbie to another, keep at it,take pics to compare your progress and you'll be amazed at your improvement overtime. BTW...I'll be doing my first wedding cake next month and I'm super nervous but confident.

This is my cake from yesterday's class.

First and second buttercream cakes I attempted [IMG ALT="I think this was the 2nd cake I'd ever decorated (in 2010). ADon't stop making cakes. Just stop selling them until you have had much more practise and can make cakes that are good quality each and every time.

Hang in there and keep the faith!!! Hope you got the a/c fixed. I don't think I could stand it here in the South without my air conditioning. For every mistake you make you are also gaining knowledge so never give up.  Things will get easier the more you practice!!!
